These carrot energy bites are made for long workdays, wherever they take place. Easy to prepare and simple to pack, they offer a quick boost when there’s little time to pause – at a desk, on the road or outdoors.
Fresh carrots bring fiber and natural sweetness, while oats and nuts provide steady energy that lasts beyond the moment. A spoon of nut butter holds everything together, while subtle spices bring warmth without turning the energy bites into a dessert. Rolled in coconut and chilled, they stay soft and satisfying.

Ingredients:
- 4 carrots
- 80g almonds
- 20g coconut flakes
- 10 pieces dates
- 150g oats
- 2 tbsp nut butter (e.g. almond, hazelnut or peanut)
- Pinch of vanilla
- Pinch of cinnamon
- Pinch of nutmeg
- Pinch of cacao
Preparation:
In a food processor, finely pulse the carrots with the nuts until evenly chopped but not pasty. Add the rolled oats and dates, then pulse again until the mixture begins to stick together. Scrape down the sides if needed. Add the nut butter and spices and blend until fully combined and slightly sticky. Shape the mixture into small, even balls, roll gently in coconut flakes and refrigerate for at least 30 minutes until firm.
Enjoy straight from the fridge or pack for later.
