A rich and flavorful Finnish recipe that turns salmon into pure comfort.
Finnish Salmon Soup – or Lohikeitto – is a classic of Nordic cuisine, deeply rooted in Finland’s coastal traditions. With tender salmon, hearty root vegetables, and a silky broth enriched with cream, it brings together simple ingredients in a way that feels both rustic and refined. As a true one-pot dish, it’s practical and fuss-free – especially welcome during the cold, dark months of winter when comfort and warmth are most needed. In Northern Europe, preparing this soup is more than just cooking – it’s a seasonal ritual that turns everyday staples into a nourishing bowl of coziness.

Preparation time: 30 min


Ingredients:
- 1 1/2 tbsp olive oil
- 1/2 pc onion
- 1pc bay leave
- 170 gr potatoes
- 170 gr salmon
- 100 ml cream
- 1 tsp butter
- Salt to your taste (soup tastes sweeter because of cream, so might require more salt)
- Black pepper to your taste
- 2 tsp dill (preferably fresh)
- Lemon - slice per plate
- 300 ml water (might require more if cooked on high temperature)
Preparation:
Fry the onion in olive oil in a pot. Once the onions are soft, add water and a bay leaf. Bring to a boil.
Prepare the potatoes by cleaning and cutting them into cubes, then add them to the pot. Cook until the potatoes are ready (approximately 10-15 minutes, depending on the size of the cubes).
Cut the salmon into cubes, add them to the pot, and cook for another five minutes. Then, add the cream.
If you would like the soup to be thicker, add starch (one teaspoon of starch mixed with one tablespoon of water until melted). This step can also be skipped.
Add the butter and remove from heat.
Add salt and pepper to taste, then add dill and lemon. Enjoy!
